So today marked a new beginning for both Nikki and I. The past week has been insanely busy for both of us. And, as I'm sure you know, when you're busy its difficult to eat healthy unless you plan for it. So that's what I've learned- I have to plan my meals at the beginning of the week because life is hectic. What is that saying? If you fail to plan, you plan to fail? That's ridiculously cheesy true, right? So this week we are planning on succeeding! Wouldn't this be easier if  we all had a live-in chef and personal trainer?! I will add that to my wish list right under a live-in maid who does my laundry, and mops my floors.... oh and scoops dog poo! A girl can dream, right?

But there is a silver lining! Even through all the cheating, I've still lost 6 pounds from my starting weight! woohoo! You've got to start somewhere... but I know I can do better. So tomorrow I will be counting my calories and hitting the gym!

A Valentine's Day to.... Forget??

Yesterday was great. My husband, Michael, and I both had the day off work and were able to spend Valentine's Day together. It was nice. We slept in, went to a late lunch/early dinner, went shopping for antiqued home decor(our favorite pastime), and then came home with three different samples of paint for our guest room which none will call "home".

During our late lunch/early dinner, I get a phone call from Nikki. I answer and she says, "do you have any idea how flippin' hard it is to eat healthy on Valentine's Day?!"

Long pause..........

"So, I had a Jamaican jerk chicken sandwich for lunch"-me.
"oh that's not too bad. You should be OK."-Nik

Even longer pause...............

"And I devoured the most amazing french fries in my life."-guilty me.
"oh ya, you're screwed."-Nik.

So I'm sure I ate over 2,000 calories in one sitting which is way over our 1,200-1,400 bracket we're suppose to stay in. Oops. Needless to say, I came home and worked out to my Jillian Michael's video.

Before I started counting calories and thinking about what I was eating, I'm sure my intake was off the charts. Not anymore though.

(I'm choosing to act like yesterday never happened....)

here's a healthy tip I found from www.hungry-girl.com for those of us who enjoy fried foods!

In your blender or food processor, blend Fiber One original cereal( be careful not to get any of the sweet stuff.... that could be weird) with your spices of choice and use as breadcrumbs! First, dip your chicken(or whatever you're making) into egg substitute, then roll into your "breadcrumbs" to evenly coat. Then just bake in your oven!  Its a great way to cut out all of those calories and fat that comes with fried foods and to pump up your fiber! I'll be doing this with fat free string cheese this evening.... I'll let ya know how it goes!

The Journey Begins

Well...it is day two of this adventure.  I decided to call it an adventure after typing the title because that seems more fun than journey. The truth is, I hate dieting.  When I'm dieting, all I want to eat is cheetos, brownies, and ice cream.  Unfortunately, those are the items that got me to this point to begin with.  So my solution... baked 100 calorie packs of cheetos, skinny cow ice cream... and no brownies.  :-)

I plan on using this blog to update my total calories, my weight, and before and after pictures.  As shameful as it is to post all of that, I feel it will hold me accountable.  I told Bailey we had to post our pictures in biker shorts and sports bras and there was a long pause on the phone... hahaha.  Of course I'm sure I'll share funny things about my children.  After all, they are the reason I stress eat; therefore, I feel they should be included. (I'm just kidding...kind of)
